Mocha Rum Balls
Yield: about 4 dozen
Ingredients
| 60 | Nilla wafers, finely crushed | ||

| 1 | cup | powdered sugar | |
|
|
|||
| 1 | cup | Planters pecans, finely chopped | |
|
|
|||
| 1/2 | cup | butter, melted | |
|
|
|||
| 2 | tablespoons | light corn syrup | |
|
|
|||
| 2 | tablespoons | unsweetened cocoa | |
|
|
|||
| 1/4 | cup | rum | |
|
|
|||
| 1 | teaspoon | instant coffee granules | |
|
|
|||
| Powdered sugar for coating | |||
|
|
|||
Directions:
Mix crumbs, 1 cup powdered sugar, pecans, butter, corn syrup and cocoa in large bowl. Blend rum and instant coffee until coffee is dissolved; stir into crumb mixture. Let stand 15 minutes. Shape into 1-inch balls; roll in powdered sugar. Flavor improves with time.
